Farmers Market Finds: Crispy Thai Wings featuring Bok Bok's "A-Ma's Everything Sauce"

Every week we discover a product from a local maker and create a recipe inspired by it. This week, we're cooking with Bok Bok's A-Ma's Everything Sauce.

There's something special about walking through a farmers market and finding a product you've never tried before. Sometimes it's a loaf of bread. Sometimes it's a jar of fermented vegetables. And sometimes it's a sauce that instantly makes you start imagining dinner.

This week we picked up Bok Bok A-Ma's Everything Sauce, a sweet, savory, and spicy sauce inspired by Thai family recipes. It's the kind of pantry staple that can turn simple ingredients into something memorable.

For our first recipe, we kept it simple: ultra-crispy chicken wings glazed with warm A-Ma sauce.

 

Crispy Thai Wings with Warm A-Ma Glaze

Prep Time: 10 minutes

Cook Time: 20–25 minutes

Servings: 3–4

Ingredients

Wings

  • 2 pounds or 900g chicken wings, separated into flats and drums
  • 1 tablespoon or 12g aluminum-free baking powder
  • ½ teaspoon or 3g kosher salt
  • ½ teaspoon or 1g freshly cracked black pepper

Glaze

  • ¾ cup or 180g Bok Bok A-Ma's Everything Sauce
  • 1 tablespoon or 15g soy sauce (or fish sauce for extra umami)
  • 1 tablespoon or 15g fresh lime juice

Garnish

  • Fresh cilantro
  • Toasted sesame seeds
  • Sliced scallions

Instructions

Step 1: Prepare the Wings

Pat the wings completely dry using paper towels. Dry skin is the key to achieving crispy wings.

In a large bowl, toss the wings with the baking powder, kosher salt, and black pepper until evenly coated.

Step 2: Air Fry

Arrange the wings in a single layer in your air fryer basket.

Cook at 380°F for 15 minutes.

Flip the wings and increase the temperature to 400°F.

Cook for another 5–8 minutes, until deeply golden and crisp.

Oven Method

Bake on a wire rack over a sheet pan at 425°F for 40–45 minutes, flipping halfway through.

Step 3: Warm the Glaze

While the wings cook, combine:

  • Bok Bok A-Ma's Everything Sauce
  • Soy sauce (or fish sauce)
  • Lime juice

Warm gently in a small saucepan over low heat for about 2 minutes until glossy.

Step 4: Toss

Transfer the hot wings to a large bowl.

Pour the warm glaze over the wings and toss immediately until every wing is coated.

Step 5: Finish

Top with:

  • Fresh cilantro
  • Sesame seeds
  • Scallions

Serve immediately with extra A-Ma sauce on the side.

 

Chef's Tip:

Warm the sauce instead of pouring it straight from the refrigerator. A warm glaze coats crispy wings much more evenly and helps create that sticky restaurant-style finish.

 

Quick Weeknight Variation

15-Minute Sweet & Spicy Fried Rice

If you still have some A-Ma sauce left, here's another easy dinner.

Ingredients

  • 3 cups cold cooked rice
  • 2 eggs
  • ½ white onion, diced
  • 2 tablespoons neutral oil
  • 1 tablespoon light soy sauce
  • 3 tablespoons Bok Bok A-Ma's Everything Sauce
  • Green onions

Instructions

  1. Scramble the eggs and set aside.
  2. Sauté the onions until softened.
  3. Add the cold rice and cook until lightly toasted.
  4. Stir in the soy sauce.
  5. Return the eggs to the pan.
  6. Turn off the heat and fold in the A-Ma sauce.
  7. Finish with sliced green onions.
